So, with football season comes snack food. It normally brings out the worst in me; ice cream, bagel bites, queso from a jar, etc. All that organic community grown food stuff goes out the window, and I revert back to how I would have eaten at age 8 (if my parent would have let me). Now, I am not saying my nachos are perfect. The only thing grown local are the jalapenos from the backyard. But minus the overload of cheese, these aren’t too bad. (I feel like I am trying to convince myself.)
I think my good friend Cyrus instilled a love of nachos in me. It is impossible for me to make nachos without thinking of him. He would never pass up an opportunity to make nachos for his friends. Sadly, Cyrus moved to Florida, so I have to make my own damn nachos.
Nachos
- chips
- salsa
- black beans
- ground turkey (optional)
- taco seasoning
- cheese (you can use low-fat or show a little more restraint than I did)
- jalapenos
Other toppings to consider:
- spinach
- black olives
- bell peppers
- green onions
- meat substitute

They look beautiful. But I still miss Cyrus!

I made chili last week, and I bought some rice to go underneath (it’s a Thomson thing, rice under everything). But then, walking around Kroger, I spotted some cheap-ass chips. And then found something called “nacho cheese” in the Kraft cheese aisle. And thus the Dufrechou night of chili cheese nachos was born.
Man, we totally partied on those. Granted, it was turkey chili, and everything was made from scratch, but ooo ooo, were they good.
That sounds amazing. And ain’t nothing wrong some turkey chili.
